Job Description

Chief Steward


Reports to: Executive Chef, Director of F&B

Oversees: Assistant Chief Steward, Stewarding Supervisor, Lead Steward, Stewarding Trainer, Stewarding Night Cleaner, Steward


Scope


The Chief Steward will oversee all aspects of the Stewarding Department and ensure a superior standard of cleanliness for all glassware, flatware, tableware and kitchen equipment in support of our Culinary and Food & Beverage teams.


Duties and Responsibilities


Balance operational, administrative, and Stewarding team member needs
Maintain inventory and record keeping for all dinnerware, flatware, and glassware
Source and price new product and present proposals to Executive Chef and Director of F&B for new items or for large purchases
Review all banquet event orders to ensure proper set-up is in place
Manage labour and expense budgets and approve all monthly purchases
Keep an up-to-date proactive purchase template for each month’s budget break down
Manage supply requisitions, chemicals and china/glass to ensure costs and breakage are kept to a minimum
Prepare Purchase Orders and Stores Requisitions to be approved by GM and Controller
Ensure all breakages and chipped items are taken out of circulation and inventoried
Send and receive all items under warranty
Manage work schedule, vacation, and time off requests of all Stewarding team members
Routinely inspect all dishwashing equipment and kitchen areas to ensure that cleanliness and sanitary procedures are maintained and that all equipment is in proper working condition
Trouble-shoot problems with dishwashers and related kitchen equipment
Complete performance reviews and administer performance management of Stewarding team members in accordance with company policy, documenting all actions taken
Train Stewarding team members in the performance of their duties

Work Experience

Qualifications


Completion of Grade 12 or equivalent
Post-secondary education in business or hospitality/tourism is an asset
3+ years of experience in a managerial role in a Stewarding department
Solid administrative abilities and competent in Microsoft Word, Excel, and Outlook
Strong communication and interpersonal skills
Comfortable providing positive feedback and support to all team members
Able to contribute to creating a motivating work environment
Understands the importance of adhering to and enforcing organizational policies and procedures.
