Job Description

Our guiding principle is simple: Make It Count—in every cut, every detail, and every guest experience. As Head Butcher, you bring strong technical skill and deep product knowledge across all proteins—beef, poultry, game, fish, and sausage production. You’ll manage day-to-day butchery operations with precision and efficiency, ensuring accuracy in scaling, yield, and quality control. By maintaining organized systems, disciplined cleanliness, and consistent standards, you’ll support our culinary teams with the highest level of craftsmanship and respect for each ingredient.

Competitive Salary: $84,000-$88,000 gross annually, based on previous experience & education

Job Duties Include:

Reporting to the Executive Chef responsibilities and essential job functions include but are not limited to the following:

Lead, mentor, and develop the butchery team by fostering a culture of excellence, conducting performance reviews, and providing ongoing coaching and training.
Oversee all butchery operations, including the precise breakdown of meats and seafood, ensuring quality, consistency, yield optimization, and adherence to brand standards.
Maintain strict food safety, cleanliness, and organization standards across all workspaces, ensuring compliance with hygiene regulations and internal audit requirements.
Manage production, inventory, and cost control, including ordering, product traceability, yield management, and alignment with budget targets.
Collaborate with Culinary Leadership and Purchasing to support menu development, forecast needs, and drive sustainable and efficient product utilization.
Ensure operational excellence through effective scheduling, payroll management, equipment maintenance, and strong communication with front-of-house and supporting departments to enhance the guest experience.

Qualifications

Your Skills & Qualifications:

Minimum of 5 years of culinary leadership experience, preferably in a luxury setting or large kitchen environment
Red Seal Certification (Journeyperson’s papers) or recognized international equivalent required; candidates without Red Seal may alternatively complete Rouxbe Culinary Foundations level 1 & 2. Receiving certification in both with a grade greater than 90% and 54 months (7,020 hours) experience in relevant workplaces
Valid Canadian Food Handling Certification
Proven ability to break down whole animals with precision and efficiency.
Strong understanding of yield management, inventory control, and food cost analysis.
Exceptional organizational and leadership skills; able to train and motivate a diverse culinary team.
Creative mindset with a passion for quality and innovation
Proficient in computer programs, including Word, Excel, and PowerPoint
Strong knowledge of financials, including labor and food cost management
Commitment to sustainability and responsible sourcing practices
Excellent leadership, organizational, time management, and communication skills
